Where one has 2 double beds in a room, we can sell up to 4 persons per room, however we want to be able to restrict that to a maximum of 2 adults and 2 children (under the age of 18) and not allow the guest to book 4 adults.

It could be a great idea to have the possibility to settle a baby occupancy, apart of the adult/children occupancy.
For example :
Our first Room Category can welcome 2 adults or 1 adult +1 child, so I have to settle the maximum occupancy for this room to 2.
This same Room can also welcome 2 adults/children + 1 baby with a cot. With the current setting, couples with baby won't be able to book this room because of the maximum occupancy of 2, to avoid booking of more than 2 people.
